Josh and I like to make special breakfasts on the weekend. And, yes, I do mean “we.” Josh started the tradition by getting up with the kids and making biscuits or pancakes while I had a weekend “lie in” {aka I slept “late”- I am still using quotation marks because sleeping “late” with kids means 8am….sigh.}. I was so impressed that he could hang with the kids and make a yummy breakfast from scratch! He just pulled out the cook book one Saturday morning and learned how to make pancakes…he did the same thing the next day, and we had a new tradition.
Recently, even though Josh heads out to study for a few hours before we get up, the kids have slept later themselves {bless them!}, so I still have a wee lie in, and then I make breakfast. Always a fan of variety, I was tired of the same old stuff and had made biscuits and pancakes the previous couple of days {yea me!}…I looked around and discovered we had plenty of stuff for breakfast burritos! I’m not sure the British have fully embraced the goodness of a breakfast burrito, but it really hits the spot on a lazy day.
Breakfast Burritos

4-6 tortillas
- 4 eggs, scrambled with cheese
- 2 medium potatoes, diced and sauteed with onions in butter
- link sausage, sliced and thrown in with the potatoes
- salsa
