Meals that Impress {without the stress!}: Asian Tacos

Since becoming a mother of 3 who also works at home, I have had to figure out ways to be creative in the kitchen without neglecting my kids, husband, or work!  I thought I’d share a few of my meals that have impressed my family but have not added a lot of stress to the hustle and bustle of our day.

Asian Tacos {adapted from Rachael Ray’s magazine}

  • 6-8 chicken thighs
  • 3/4 c soy sauce
  • 3 T honey
  • 4 cloves garlic, chopped
  • 3/4 c green onions, sliced
  • 1T fresh grated ginger
  • 1/4 t sesame oil
  • tortillas
  • carrots (buy them shredded if you can)
  • cucumbers, sliced and quartered
  • hoisin sauce

So easy!  Put the chicken thighs in the slow cooker/crock pot.  Mix the sauce ingredients {soy sauce thru sesame oil}and pour over the thighs.  Cook on low until dinner.

20 minutes before you’re ready to eat (or earlier in the day, say while the baby is napping ;) ), cook some white rice, chop cucumbers, and shred carrots.  Pull out the chicken, shred it, and build your tacos!  Don’t forget some hoisin sauce either.

  2. These sound really good! I’m putting these on the menu for this week. Do you think I could use some chicken that’s already cooked that I have up in the freezer if I just marinated it in the sauce during the day? I hate to fix more when I already have some in the freezer.
