My mom is currently in the air, on her way here! So, I am guessing about meals b/c I am never sure about what we’ll do with guests. So, I chose easy to make meals so I’m not stressing about anything, especially this first week.
- Monday: Ginger Flank Steak (Turkey for us), Pilau Rice, and Asian Cucumber Salad
- Tuesday: Apple & Onion Chicken with Rosemary (crock pot- delicious and easy- see below!)
- Wednesday: Left-Overs
- Thursday: Japanese Chicken and Japanese Salad
- Friday: Mushroom Risotto and something delicious that will go with it…?
- Saturday: Left-Overs
- Sunday: Tacos, refried beans, homemade salsa
Recipe for Apple & Onion Chicken with Rosemary
- 2 Granny Smith apples
- 1 yellow onion
- 3 bone-in chicken breasts
- 1 can cream of chicken or cream of mushroom
- 1 can chicken broth
- a handful of Rosemary
- Egg noodles or brown rice
Core, peel, and slice apples. Slice onions. Lay both on bottom of crockpot. Then, place chicken on top of apples and onions. Then, add soup and broth. Sprinkle with Rosemary. Cook all day. If too runny, thicken with cornstarch last 30 minutes. Serve over hot egg noodles or brown rice. I really like it with the rice.

And… for your mushroom risotto … I’ve vote roasted asparagus, if your family likes asparagus!
First solution: get a crockpot!! It’s worth it an dis such an easy way to ease into cooking, which I know you want to do.
Second solution- same idea as recipe, just put it all in a big pot and bring it to a boil. Make sure all ingredients are submerged, which may mean more broth. Then, bring it down to a simmer. You could leave it on low all morning, I would guess, or cook it higher (medium heat) for half an hour. Then, pull out the chicken, shred it, and put it back in. Serve over noodles or rice.
