Today is Rebekah’s 4th birthday! Man, I love that girl. More on that later today. ;) Anyway, we have a short meal week because we’re going to London on Thursday! We are staying at Josh’s cousin’s flat, who is kind enough to stay with a friend so our family can stay at their flat! Isn’t that amazing? Plus, Josh’s cousin’s wife, Karen, founded an incredible company, Cupcake Mums, and is letting Phyllis and me poke around a bit! I’m so excited!
- Monday: lunch out at Jimmy Chung’s; dinner homemade pizza, Caesar salad
- Tuesday: Kung Pao Chicken, brown basmati fried rice
- Wednesday: Greek Chicken {see below}, wheat pitas, Greek salad, herbed rice
- Thursday-Monday: London!!!!

Greek Chicken
- 4 chicken breasts
- olive oil
- 1 lemon
- Mediterranean herbs
- 1/2 c sliced green onions
- 1 c Greek yogurt
- 2 tomatoes, chopped
- 1/2 sliced red onion
- 1/2 c kalamata olives
- 1 c Feta cheese
- 1 handful basil leaves
- 4-6 wheat pitas
- 1 c cooked basmati rice
-Sprinkle chicken with Med herbs and squeeze a lemon over them. Then, grill or saute the chicken in olive oil. Slice and set aside.
-Make the Greek Salad.
-After you’ve cooked the rice, sprinkle some Med herbs (or just thyme) in it, as well as some sliced green onions.
-Serve chicken in pitas with rice on the side. Have the yogurt and salad as a side that you can add to the pita or eat separately.

Do you buy Mediterranean herbs as such or do you have to add several different herbs?
Charla- I get a big thing of Mediterranean herbs at Costco…Schwartz is the brand, I think. I imagine it is a combination of thyme, basil, Italian seasonings, and oregano?
I would love that Greek chicken. Too bad my husband doesn’t like feta. Have fun in London.
