You may have deduced from the title that we are headed to TX this week! You may also have noticed how excited I am!! So, it’s a short menu plan this week since we leave on Thursday at a truly ungodly hour. I am hoping to keep “menu planning” for the 7 weeks we are away with meals I am in charge of or recipes we discover and make while in my homeland. Fear not, I will be blogging! ;)
This week’s abbreviated menu plan
This week, we are finishing freezer foods, which include a bag of shrimp. You will them starring in several meals. ;) Honestly, all 3 of these meals are some of our favorites, so give ‘em a try sometime!
- Monday: Honey-Orange Shrimp with udon noodles, steamed sugar snap peas
- Tuesday: Carrot-Coriander Soup, baked potatoes, & crusty bread
- Wednesday: Spicy Shrimp Linguine with artichokes, steamed carrots & broccoli, crusty bread
After this, I am hoping for some serious Tex-Mex and my mother-in-law’s wonderful cooking! I get many recipes from her and from my mom, so I am very excited to visit them both!
