Menu Plan Monday: Warm Comfort Foods

Last week we enjoyed the calzones and the broccoli cheese soup was a nice warm addition to our chilly home!  We paired it with jacket potatoes {aka baked potatoes} and, inspired by Christy, I had a couple different toppings: butter, cheese, chives, bacon, and chili!

Menu Plan

We are on the countdown to departure for the States, and TX specifically!!  So, I menu planned to use as many freezer items as possible since we’ll be gone for 7 weeks. {!!!!!}

French Onion Soup

  • 4 T butter or margarine
  • 2 T vegetable oil
  • 2 lbs thin-sliced onion
  • 1t salt
  • 3 T flour
  • 2 qt beef or chicken stock
  • 1/4 t black pepper
  • 1 bay leaf
  • 1 clove garlic, minced
  • day-old bread slices
  • 1/4 lb Provolone, Swiss, or some other white cheese slices

Melt butter and oil together and add onions.  Cook until onions are golden brown, add garlic and flour.  Mix well and ad stock, salt, pepper, and bay leaf.  Simmer for 10 minutes.  Serve in oven-safe bowls, each topped with a bread slice and cheese slice.  Broil bowls in oven until golden brown.

Great with Caesar salad!
