How is it Monday again?! This week we have the pleasure of Josh’s sister, Sarah, visiting!!! Yea! Here’s what we’ve got planned.
- Sunday: BBQ for 2nd Mother’s Day!
- Monday: Left-Over Honey Molasses Drumsticks, rice, and veg
- Tuesday: Chicken Broccoli Lo Mein, egg rolls
- Wednesday: Chicken & Green Chile Quesadillas, chips & salsa
- Thursday: Chicken Enchiladas, chips & salsa, refried beans
- Friday: Left-Overs
- Saturday: Cilantro-Lime Chicken, sweet corn, refried beans (yes, we might do chips & salsa again- don’t judge us)
- Sunday: Tortellini & Pasta Sauce

On Friday, we are going to our first Ceilidh. It is a very Scottish dance where the guys wear kilts. Sweet.
On Saturday, I am throwing together a little Ice Cream Social for my friends to meet Sarah. We will have ice cream sundaes and cherry cokes or coke floats- have I mentioned that I love Coke?
BBQ turkey burgers
Josh threw together this recipe from several different ones online- delicious!!
1# ground/minced turkey
1/2 of a yellow onion, minced
2 T breadcrumbs
1 beaten egg
1/2 t Dijon Mustard
3T crumbled bleu cheese or Feta (we did Feta b/c we had it on hand)
1 T Worchestire Sauce
3-4 fresh basil leaves, chopped

Hand mix it all and grill!
Chicken Broccoli Lo Mein
Ready-to-Wok Udon noodles
1/4 c peanut butter
1/4 c soy sauce
1 1/2T br sugar
1T lemon juice
1/3 c hot water
1 clove chopped garlic
2T olive oil
1lb chopped chicken (uncooked)1 medium bunch broccoli, cut
1 small onion, chopped
1/2 c peanuts
In a skillet, saute chicken and onion in oil. After 3-4 minutes, add broccoli. While cooking, make sauce: combine peanut butter thru garlic in a jar with a lid so you can shake it. Once chicken is almost done, add sauce and cook until done. When chicken is fully cooked, add noodles and saute for a few minutes to get them soft. Then, add peanuts.
Chicken Enchiladas
1 pkg cheese, shredded (Colby Jack is my fave)
8-12 (dependent upon size) flour tortillas
1 small can chopped green chilies
1 c milk
2 T flour
1/2 c chopped fresh cilantro
4 green onions, chopped, the whites separated from the greens
1 1/2 # boneless, skinless chicken, sliced in thin, long strips
1/2 c salsa
3 t chili powder (you can use more or less)
1/2 c tomato sauce
olive oil/veg oil
Preheat oven 375.
Warm tortillas in microwave.
Shake together milk, flour, and green onion WHITES.
Combine chicken and chili powder.
Saute in oil.
Stir on milk once chicken is almost done.
Bring to a boil.
Cook until thick (3 min).
Add green onion greens and green chilies, stirring 2 min.
Remove from heat and stir in 1/4 (HALF) c cilantro.
Spray 11×17 dish dish with Pam.
Roll tortillas with chicken and place seam-side down.
Combine rest of cilantro, tom sauce, and salsa.
Spoon over ench’s and top with cheese.
Bake 25 minutes.
